My favorite tuber, Sweet Potatoes! They are high in beta carotene, vitamin A and fiber. My apple walnut stuffed sweet potatoes are a favorite in my house all year long. The soft orange creamy flesh of the sweet potato, paired with the sour granny smith apple and the buttery sweet spiced walnuts will have you and the family begging for more. Add a scoop of vanilla bean ice cream if you dare!

Apple-Walnut Stuffed Sweet Potatoes

Ingredients

  • 1 medium southern sweet potato
  • 1 medium granny smith apple
  • 1 tsp coconut oil or butter
  • 1/2 tsp vanilla extract 
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 tsp stevia or honey
  • 1/4 cup hot water
  •  1 cup chopped walnuts 
  • 1 tsp coconut oil or butter
  •  1 /2 tsp cinnamon
  • 1 tsp honey or stevia
  • a pinch of sea salt

Instructions

  1. Bake the sweet potato on a sheet pan with parchment at 400 degrees for 30min or until fork tender. Remove sweet potato from oven, let rest 15 min until warm.
  2. Chop your granny smith apple into bite size pieces, set aside. In a small sauté pan, add in your coconut oil, chopped apple, vanilla extract, nutmeg, cinnamon, stevia, and hot water, mix, cover, and steam chopped apples until soft. Remove apples from pan and set aside.
  3. Toast your chopped walnuts in a small sauté pan on medium heat to remove the natural oils. Next, add in coconut oil, cinnamon, honey, and sea salt, mix quickly, and remove from heat. The walnuts will become sticky sweet from the honey. 
  4. Assemble the sweet potato, slice it in half, fork the flesh. Next, top with sweet/sour apple mixture and sticky sweet chopped walnuts. 
  5. Top with a scoop of vanilla bean ice cream or whipped cream. Yum! Enjoy!

Sweet Potatoes: Sweet potatoes are nutritious, high in fiber and deliciously good! They can be eaten baked, boiled, steamed, fried, and raw. Sweet potatoes come in an array of colors, orange, white, yellow,  purple and pink. Sometimes called yams in America, but don’t get them confused, sweet potatoes and yams are totally different, with yams the skin is like tree bark and the flesh is white and very starchy, like the yucca root. Sweet potatoes have more of a reddish skin and soft stringy flesh.
