This cauliflower zucchini stir-fry is fast and easy to prepare. Its spiced with turmeric, ginger and black pepper, which gives it a lovely aroma. I eat it every time I’m feeling a little under the weather. Its healthy and delicious!
Cauliflower Zucchini Stir-Fry

Ingredients

- 1/4 cup olive oil
- 5 large garlic cloves
- 1 large onion
- 2 large zucchini
- 1 large head cauliflower
- 1 cup shredded carrots
- 1 bunch cilantro
- 1 tbsp turmeric powder
- 1 tbsp ginger powder
- 1 tsp black pepper
- 1 tsp salt
- 1/2 cup water
Instructions
- Mince garlic cloves and chop onion, set aside
- Chop all other veggies, shred carrots, set aside
- Heat 1/2 of the olive oil in a pan on medium heat, add in your minced garlic and chopped onions, mix, add a pinch of salt, cook 1-2 min until onions are translucent.
- Add in zucchini, carrots and cauliflower, mix and cook for 5min.
- Next, add your chopped cilantro, spices, and drizzle remainder of olive oil, mix and cook 5 min.
- Last add 1/2 cup hot water, cover to steam 3 min or until cauliflower is fork tender.
