There’s nothing like a good and hearty chicken barley soup on a cold winters day. This soup is fast, clean, and delicious, with only 6 ingredients plus the seasonings! I use lots of dried oregano, which is great for the respiratory tract, colds and flu.

Chicken Barley Soup

Ingredients

  • 1 tbsp olive oil
  • 2 large split chicken breast, with skin and bones
  • 3 large garlic cloves
  • 1 large yellow onion
  • 1 12oz bag frozen broccoli
  • 1 12oz bag frozen mixed vegetables
  • 23 tbsp dried oregano
  • 1 tbsp sea salt
  • 1 tsp black pepper
  • 1012 cups hot water
  • 1 cup barley

Instructions

  1. Remove frozen broccoli and mixed vegetables from freezer and defrost in a bowl on the counter for about 1hr.
  2. Chop onion and mince garlic cloves, set aside.
  3. Heat 1 tbsp olive oil in a large stock pot on medium heat, add in the 2 large chicken breast, sear on each side for about 1 min.
  4. Next, add in minced garlic and chopped onions, mix and cook 1 min. Add in broccoli and mixed vegetables, mix and cook 3 min. 
  5. Season with oregano, sea salt and black pepper, mix and cook 1 min.
  6. Add 10-12 cups hot water, mix and cover, cook on medium heat for about 15-20min, until chicken is tender. With a spoon, separate the chicken from the bones. Remove bones and skin. 
  7. Add in 1 cup barley and cook for 10-15min until barley is soft. 
  8. Re-season with sea salt/black pepper. Enjoy!
