Chicken Burrito Bowls

Ingredients

Scale
  • 1 medium Grilled chicken breast
  • 1/4 cup Black beans
  • 1/2 cup Salsa
  • 1  cup White quinoa
  • Green Goddess Dressing
  • 1 Avocado
  • 1/4 bunch Cilantro, leaves
  • 1 small jalapeno (remove seeds)
  • 1 tbsp lemon juice
  • 1/2 cup water
  • sea salt/black pepper

Instructions

  1. Chop: chicken breast, drain black beans, mix salsa and cook the quinoa
  2. Dressing: In a food processor/blender, mix avocado, cilantro, jalapeno, lemon juice, water, sea salt/black pepper until smooth and creamy. If dressing is too thick, add a little more water
  3. Layer: Add white quinoa to bottom bowl, top with grilled chicken, black beans, and salsa. Zig zag green goddess dressing on top of burrito bowl.

Notes

Green Goddess Dressing: One of my favorite green dressings,  So fresh and creamy! The jalapeno adds a little hint of heat. Remember, its the seeds that make it spicy, so if you like it spicy,  then add them and if you don’t, please remove them before blending. Do not touch your face or eyes and wash your hands immediately after.
