Crockpot meals are my favorite around this time of year. I love this delicious fast and easy crockpot lasagna! Prep time is a little long because of all those amazing fresh veggies, but once done, you just layer it, set it, and forget it! Pair it with a garden salad and some buttery garlic rolls and your families dinner is complete!
Crockpot Veggie Lasagna

Ingredients

- 1 large yellow squash
- 1 large green zucchini
- 1 cup shredded carrots
- 1 cup broccoli florets
- 1 cup fresh spinach
- 10 white button mushrooms
- 1 large red bell pepper
- 1 large red onion
- 3–5 cloves garlic
- 1/4 cup chopped parsley
- 3–28oz containers of marinara sauce
- 2 –8oz packs vegan mozzarella or regular mozzarella cheese
- sea salt/black pepper
- red pepper flakes
- 2 box Lasagna sheets (No boil)
Instructions
- Chop all veggies into bite size pieces and set aside.
- Layer all ingredients into the crockpot. First add 2 cups of sauce, About 3-4 lasagna sheets, break apart to fit evenly, 2-3 cups chopped veggies, 2-3 cups cheese and sea salt/black pepper. Repeat about 3-4 times until all ingredients are finished. End with 1 cup of sauce on top and 1 cup of shredded cheese.
- Add fresh chopped parsley, sea salt/black pepper, and red pepper flakes for garnish.
- Cook on high heat for about 2-3hrs, depending on your crock pot. Turn down to warm until ready to serve. Enjoy!
