Green Eggs Breakfast Skillet

Ingredients

Scale
  • 1 tsp olive oil
  • 2 large eggs
  • 2 avocado, slices
  • 12 small zucchini, strips
  • 1/2 tsp cumin
  • sea salt/black pepper
  • 1 tsp chopped cilantro

Instructions

  1. Cut the avocado in half, remove pit, cut 2 – 1/2 in slices, remove skin around both slices.
  2. Slice the zucchini into long thick strips.
  3. Add the olive oil to a skillet on medium heat, add the avocado slices to the pan, crack an egg in each hole.
  4. Next add the zucchini strips to the pan.
  5. Season and cook covered on medium heat for 5min.
  6. Garnish with fresh chopped cilantro. Enjoy!

Notes

How to Soften avocados: Wrap it in tinfoil and place on a baking sheet. Pop it in the oven at 200°F for ten minutes, or until the avocado is soft (depending on how hard it is, it could take up to an hour to soften). As the avocado bakes in the tinfoil, ethylene gas surrounds it, putting the ripening process into hyperdrive.
