Eggs are my favorite proteins, fast, quick, easy, anytime of the day! These Eggs Over Easy are loaded with sweet ground turkey, onions, red peppers and cheddar cheese. My favorite midnight snack!
Ingredients

- 1 tsp butter
- 1/4 cup ground turkey
- 1/4 onion, sliced
- 1/4 red bell pepper, sliced
- 2 large eggs
- a crumble of white cheddar
- a pinch of fresh cilantro leaves
- sea salt/black pepper
Instructions
- Heat butter in a small omelet pan on medium heat.
- Add in sweet ground turkey, cook until browned.
- Sauté sliced onions and red peppers for 2-3min.
- Crack both eggs on top, be careful not to break the yolks.
- Add crumbles of cheddar and season with sea salt/black pepper.
- Cook covered for 3-5min.
- Garnish with cilantro leaves.
