There’s nothing like a good spiced Moroccan meatball and egg tagine! This recipe is a first for me and I’m so happy with the turn out. The secret to this awesome tagine is the fresh tomato sauce and spices. Pair this delicious hot and bubbly tagine with a warm crusty bread to dip up all the deliciousness!

Moroccan Meatball & Egg Tagine

Ingredients

Meatballs
  • 1lb ground turkey or ground beef
  • 1 tsp sweet paprika
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt
  • 1 medium onion, diced
  • 1/2 cup cilantro, chopped  

Fresh Tomato Sauce

  • 68 medium tomatoes, grated
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 medium onion, diced
  • 1 tsp sweet paprika
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt
  • 56 large eggs
  • 1/4 cup cilantro for garnish, chopped

Instructions

  1. Prep Dice both medium onions, mince garlic cloves, and chop the fresh cilantro for both the meatballs and fresh tomato sauce, set aside
  2. Add the ground meat to a medium bowl, add in the chopped onion, cilantro and spices, mix. Start rolling the meatballs into 1/2 inch balls and place them on a plate.
  3. Next make the tomato sauce. Grab a medium bowl and a grater. Slice the tops off of the tomatoes and grate the pulp and flesh from the skin of the tomatoes, discard the skin.
  4.  Add the olive oil, minced garlic, chopped onions and spices in a large tagine or large pan, mix, cover and simmer on medium heat for 3-5min.
  5. Place the meatballs gently into the tomato sauce, cover and cook for 10 min, or until meatballs have turned brown. Remove your lid and spoon the tomatoes sauce over the meatballs. Cover and cook 5 min. Next, make 5-6 holes in the tagine for your eggs.
  6. Crack the eggs gently into the holes, being very careful not to break the yolks. Cover and cook for 3-5 min until bubbly hot!
  7. Garnish with fresh cilantro. Enjoy with fresh baked bread!

Tagine: The word tagine refers to the succulent, stew like dish which is slow-cooked in the traditional tagine cookware. Typically, a tagine is a rich mixture of meat, poultry, or fish, and most often includes vegetables or fruit.
