Southwest Chipotle Chicken Salad

Ingredients

Scale
  • 1 chicken breast
  • 1 small can chipotle peppers with sauce
  • Chicken rub: Chili powder, paprika, cumin, garlic powder, onion powder, oregano, sea salt, black pepper. Add 1 tsp of each seasoning.
  • 1/4 red bell pepper, grilled
  • 1/4 orange bell pepper, grilled
  • 1/4 yellow bell pepper, grilled
  • 1 fresh corn on the cob, grilled
  • 1 small head of romaine
  • 1 cup baby spinach leaves

Toppings

  • 35 cherry tomatoes, halved
  • 1 jalapeno, sliced
  • 1 stalk green onions, chopped
  • 1/2 cup guacamole, store bought
  • 1/2 cup pico de gallo, store bought
  • 1/2 cup pepper jack cheese, shredded
  • 1 dollop of sour cream

Creamy Lime Ranch Dressing

  • 1/2 cup sour cream
  • 1/2 mayonnaise
  • 1 small lime, juiced
  • a drizzle of honey
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • a pinch sea salt
  • a pinch black pepper

Instructions

  1. Add all seasonings in a mason jar and mix. Season chicken breast with 1-2 tbsp of seasoning mix. Add small can of chipotle peppers to a blender and mix. Add 1/4 cup of chipotle mix to chicken breast and rub into meat. Marinate 1 hr or over night in the refrigerator.
  2. Wash and chop your romaine and spinach, lightly season with sea salt/ black pepper, set aside.
  3. Cut the bell peppers into bite size 1 in pieces and shook 1 ear of corn off the cob. Add a drizzle of olive oil to the grill pan. Grill both veggies side by side on medium heat. Add sea salt/black pepper. Cook 2-3 min or until grill marks appear on both. Set aside.
  4. Grill chicken in the same grill pan. Add 1 tsp olive oil and grill on medium heat on both sides for 3-5 min or until chicken breast is no longer pink inside. Let chicken rest 10 min. Next, chop chicken into 1 in chunks.
  5. In a large bowl, add your salad mix, chipotle chicken, grilled peppers/grilled corn.
  6. Next add all the other toppings to the top of your salad, veggies, guacamole, pico de gallo, shredded cheese, and sour cream. Go around in a circle, making space for each one.
  7. Lastly, lets make the Lime ranch dressing. Add all ingredients to a small bowl and mix.
  8. Top your salad with the dressing or add on the side.
