What could be better than a warm, buttery, toasty slice of French toast with strawberries, bananas, and coconut whip! Its one of my favorites to indulge in on the weekends. I love to add different spreads and toppings to turn this French toast up a notch. My weekends couldn’t come any faster!

Strawberry-Banana French Toast

Ingredients

Scale
  • 2 slices Brioche Bread
  • 1 large egg
  • 1/2 tsp vanilla extract
  • dash of cinnamon 
  • 1 tbsp coconut oil
  • coconut whip cream
  • 3 fresh strawberries, sliced
  • 1/2 small banana, sliced
  • drizzle of maple syrup

Instructions

  1. In a medium bowl, whip the egg, vanilla extract and cinnamon, set aside.
  2. Slice strawberries and bananas, set aside
  3. Add the coconut to a pan on medium heat. 
  4. Dip the brioche slices in the egg mixture, coating both sides.
  5. Cook on each side until brown and toasty.
  6. Top with coconut whip cream, fresh sliced strawberries, bananas, and a drizzle of maple syrup. Enjoy!

Spreads: Butter, Nutella, almond/cashew butter, cookie butter, coconut/almond whipped creams.

Toppings: Fresh berries, peaches, apples, bananas, nuts, coconut flakes, chopped bacon, mini chocolate chips, cinnamon, maple syrup, raw honey.
