
Turkey Chili

- 2 tbsp olive oil
- 1 1/2 lbs ground turkey
- 1 small bulb garlic, minced
- 1 large yellow onion, chopped
- 1 of each, green, red, and orange bell peppers, chopped
- 1 tbsp sea salt
- 1 tsp black pepper
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tsp red pepper flakes
- 2–24oz cans crushed tomatoes
- 1 can kidney beans
- 1 can chili beans
- 1 cup water
- 1–2 tsp cane sugar
- 1–2 tbsp tomato paste, for thickness, optional
Toppings
- 1/2 cup cilantro, half for chili, the other half for garnish
- 1/2 cup mild cheddar cheese
- 1 avocado, mashed, add lime juice, sea salt, black pepper
Instructions
- Add olive oil to a large pan on medium heat. Add in the ground turkey, half of all the seasonings, and mix. Chop meat down to smaller pieces, cook until meat is no longer pink.
- Chop the onion, bell peppers, and mince the garlic. Add all to the ground turkey and mix, cover and cook until veggies become soft.
- Next, add in the 2 cans crushed tomatoes, and 1 can kidney, and 1 can chili beans, mix. Add in the 1 cup of water, and tomato paste, if needed. Cook on medium heat for 20-30 min. Continue to stir the chili every 5 min, so it doesn’t stick on the bottom of the pan.
- While chili is cooking, prepare your garnishes. Chop the cilantro, grate the cheddar cheese, and make the avocado mash.
- Once the chili is done, taste it, and then re-season with the other half of the seasonings, add the cane sugar, and half of the fresh chopped cilantro, mix and serve.
- Top the chili with fresh cilantro, shredded cheddar cheese, and avocado mash.
