These are my favorite meatballs to make for my family! They are fast and easy and melt in your mouth delicious! They always have my family running to the table. Enjoy them with zucchini spirals for a low carb/keto option or your favorite brown pasta!

Turkey Meatballs with Zucchini Spirals

Ingredients

Scale
  • 2lb ground turkey
  • 1 cup almond flour
  • 1 cup almond parmesan cheese
  • 2 large eggs
  • 1 tbsp italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp crushed red pepper flakes
  • Sea salt/black pepper
  • 34 28oz cans crushed tomatoes
  • 3 tbsp extra virgin olive oil
  • 1 large red onion, diced
  • 6 large cloves garlic, minced
  • 35 medium zucchini, spiralized

Almond Parmesan Cheese

  • 3/4 cup raw almonds
  • 3 tbsp nutritional yeast
  • 3/4 tsp sea salt
  • 1/4 tsp garlic powder

Instructions

  1. Almond Parmesan Add all ingredients to a food processor and mix/pulse into a fine meal.
  2. Meatballs In a large bowl, add your ground turkey, eggs, almond flour, almond parmesan, seasonings and mix. Next, form meatballs, about 1 1/2 inch to medium size, place on a baking sheet.
  3.  Marinara In a stock pot, add your olive oil, diced onion, minced garlic and crushed tomatoes and bring to a simmer on medium heat for 10-15min. Begin dropping raw meatballs into bubbly sauce, spoon hot sauce over meatballs to cover completely.
  4. Cover and cook for 10-15 min (do not stir, or meatballs will break apart). After 10 min, check the meatballs and stir gently. Lower heat some so meatballs do not stick to the bottom of the pan. Cover and cook for another 10-15 min. Serve warm with steamed zucchini spirals or your favorite brown pasta!

Notes

The Meatballs: These meatballs are the best! They are dropped raw into a warm bubbly sauce instead of fried, which makes these meatballs sooo tender! Make sure to treat them with lots of tlc. Simmer on a low to medium heat and do not stir them too much.

This meatball recipe can be doubled or tripled for large families or crowds of friends!
