Ingredients

- 1 medium red onion, diced
- 1 medium red bell pepper, diced
- 1 medium yellow bell pepper, diced
- 1 medium yellow bell pepper, diced
- 1 jalapeno, de-seeded and diced (optional)
- 5 cups yellow watermelon
- 1/2 cup cilantro, chopped
- 1 medium lime, juiced
- 1/2 tsp pink himalayan sea salt
Instructions
- Dice all veggies, watermelon, cilantro and add to a large bowl.
- Add lime juice and pink himalayan sea salt.
- Toss salsa together and re-season if needed.
- Enjoy with corn or tortilla chips or add on top of grilled chicken breast.
