Chicken Tagine with Preserved Lemon and Olives

Ingredients

- 1/2 Chicken (breast, wing, thigh, leg)
- 1/2 large lemon
- 1 tsp salt
- 2 tbsp. olive oil
- 1 tsp salt
- 1tsp ginger
- 1 tsp cumin
- 1 tsp turmeric
- 1/2 tsp black pepper
- 3 garlic cloves, minced
- 2 medium yellow onions, sliced
- 1/4 preserved lemon
- a small handful of chopped fresh parsley and cilantro
- 10–15 green olives
- 1 small hot pepper, for garnish
Instructions
- Clean your chicken, add it to a bowl with fresh lemon juice and salt, mix and rinse under cool water, set aside.
- Add olive oil to bottom of tagine, add 1/2 chicken bone-side down. Top with spices, sliced yellow onions, minced garlic, chopped parsley and cilantro, green olives, 1/4 piece of preserved lemon and 1 small whole hot pepper for garnish. Add 2 cups water and cover.
- Cook on medium-high heat for 1hr. Check half way through cooking and add 1 more cup of water if needed until chicken is nice and tender. Serve hot and steamy!
