Chicken Tagine with Preserved Lemon and Olives

Ingredients

Scale
  • 1/2 Chicken (breast, wing, thigh, leg)
  • 1/2 large lemon
  • 1 tsp salt
  • 2 tbsp. olive oil
  • 1 tsp salt
  • 1tsp ginger
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp black pepper
  • 3 garlic cloves, minced
  • 2 medium yellow onions, sliced
  • 1/4 preserved lemon
  • a small handful of chopped fresh parsley and cilantro
  • 1015 green olives
  • 1 small hot pepper, for garnish

Instructions

  1.  Clean your chicken, add it to a bowl with fresh lemon juice and salt, mix and rinse under cool water, set aside.
  2. Add olive oil to  bottom of tagine, add 1/2 chicken bone-side down. Top with spices, sliced yellow onions, minced garlic, chopped parsley and cilantro, green olives, 1/4 piece of preserved lemon and 1 small whole hot pepper for garnish. Add 2 cups water and cover.
  3. Cook on medium-high heat for 1hr. Check half way through cooking and add 1 more cup of water if needed until chicken is nice and tender. Serve hot and steamy!

Tagine the word tagine refers to the succulent, stew like dish which is slow-cooked in the traditional tagine cookware. Typically, a tagine is a rich mixture of meat, poultry, or fish, and most often includes vegetables or fruit.
