
My Eggs & Salsa Skillet is fast, easy, and keto friendly. The salty peppery fried egg, fresh salsa, creamy avocado, sweet caramelized onion, and crisp spinach leaves gives this skillet a mix of amazing flavors and a kick start to your day!

Eggs & Salsa Skillet

- 1 tsp olive oil
- 3 eggs
- 1 slice yellow onion
- 1/2 avocado
- 6–8 fresh spinach leaves
- 1/4 cup salsa
- sea salt/black pepper
Instructions
- Add 1 tsp olive oil to a skillet on medium heat.
- Crack 3 eggs, fry on each side 1-2 min, until yolk is runny, medium, or hard, depending on your preference.
- Next, add the onion slice to the same pan and sauté on both sides until onion is soft and caramelized.
- Remove skillet from heat, add 1/2 avocado, spinach leaves and salsa. Season with sea salt/black pepper. Enjoy!
