Eggs & Salsa Skillet

  • 1 tsp olive oil
  • 3 eggs
  • 1 slice yellow onion
  • 1/2 avocado
  • 68 fresh spinach leaves
  • 1/4 cup salsa
  • sea salt/black pepper


  1. Add 1 tsp olive oil to a skillet on medium heat.
  2. Crack 3 eggs, fry on each side 1-2 min, until yolk is runny, medium, or hard, depending on your preference.
  3. Next, add the onion slice to the same pan and sauté on both sides until onion is soft and caramelized. 
  4. Remove skillet from heat, add 1/2 avocado, spinach leaves and salsa. Season with sea salt/black pepper. Enjoy!
