Garden Veggie Quinoa

What can be better than quinoa? Really though, its light, fluffy and the flavor can adapt to whatever you add in. Veggies were my first choice with this one! The veggies compliment the quinoa so well along with the freshness from the red bell pepper and crisp mixed veggies, make this dish superb!

Garden Veggie Quinoa

Ingredients

Scale
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 medium red pepper, diced
  • 1 bag frozen mixed veggies
  • 2 cups quinoa
  • 1 tsp garlic powder
  • sea salt/black pepper
  • 4 cups hot water
  • 1 tbsp butter

Instructions

  1. Veggies: Take 1 onion and 1 red pepper, dice both of them, set aside.
  2. Saute: Take a saute pan and add your olive oil, the diced onion and red pepper and saute for 3-5 minutes on medium heat. Next, add your bag of mixed veggies and seasonings and saute for another 3-5 minutes.
  3. Quinoa: Next mix your Quinoa into hot veggies. Add hot water and cook on medium heat for about 15-20 minutes or until liquid has evaporated. Mix in 1 tbsp of butter. Take a fork and fluff quinoa. Serve warm.

Notes

The Veggies: This delicious Garden Veggie Quinoa is fast and easy to make. I use frozen veggies in this recipe because they cook perfect with the quinoa. Make sure your frozen veggies are thawed out and drained before sauteing.
