- 2 slices Brioche Bread
- 1 large egg
- 1/2 tsp vanilla extract
- dash of cinnamon
- 1 tbsp coconut oil
- coconut whip cream
- 3 fresh strawberries, sliced
- 1/2 small banana, sliced
- drizzle of maple syrup
Instructions
- In a medium bowl, whip the egg, vanilla extract and cinnamon, set aside.
- Slice strawberries and bananas, set aside
- Add the coconut to a pan on medium heat.
- Dip the brioche slices in the egg mixture, coating both sides.
- Cook on each side until brown and toasty.
- Top with coconut whip cream, fresh sliced strawberries, bananas, and a drizzle of maple syrup. Enjoy!
