This veggie omelette is one of my favorite FAST AND EASY BREAKFAST RECIPES, its healthy and delish! If you love veggies like me, then you’ll love this one! Pair this fast and easy veggie omelette with a side of SUMMER FRESH FRUIT or a cool and creamy GREEN AVOCADO SMOOTHIE!
THE BEST VEGGIES AND HERBS FOR YOUR OMELETTE!
Pick veggies that are FRESH AND CRISP AND IN SEASON if you can. The summer months are the best times to find these veggies in your local FARMERS MARKETS AND PRODUCE MARKETS. Some of my favorites are, fresh mini sweet peppers, zucchini, yellow squash, green onions, and asparagus!
WITH TOPPINGS LIKE THESE, YOUR OMELETTE IS SURE TO BE A HIT!
- Sautéed mushrooms
- Spinach
- Avocado
- Tomatoes
- Artichoke hearts
- Roasted potatoes or hash browns
- Sautéed asparagus
- Leeks
- Scallions

- Red or yellow bell pepper
- Chile peppers (such as jalapeño or poblano)
- Chives
- Parsley
- Basil

WHAT I USE
- Mixing Bowls– I love my mixing bowls, their great for whiping eggs!
- Omelette Pan – A really good non-stick, high heat omelette pan.
Veggie Omelette
- Total Time: 10min
Ingredients
- 1 tsp coconut oil
- 1/4 cup red onion
- 1/4 cup sweet peppers
- 1/4 cup mushrooms
- 1/4 cup broccoli
- 3 eggs
- 1 pinch each sea salt/black pepper
Instructions
- Heat one tsp of coconut oil in a small omelette pan on medium heat.
- Add in sliced red onions, sweet peppers, mushrooms, and broccoli.
- Saute veggies for 1min on medium heat.
- Wisk Add whisked eggs into pan with sauteed veggies.
- Cook on each side for 1-2 min or until omelette is firm.
- Serve with a side of fresh fruit. Enjoy!
