Ingredients

- 1 tsp coconut oil
- 1/4 cup red onion
- 1/4 cup sweet peppers
- 1/4 cup mushrooms
- 1/4 cup broccoli
- 3 eggs
- 1 pinch each sea salt/black pepper
Instructions
- Heat one tsp of coconut oil in a small omelette pan on medium heat.
- Add in sliced red onions, sweet peppers, mushrooms, and broccoli.
- Saute veggies for 1min on medium heat.
- Wisk Add whisked eggs into pan with sauteed veggies.
- Cook on each side for 1-2 min or until omelette is firm.
- Serve with a side of fresh fruit. Enjoy!
