Veggie Omelette

  • 1 tsp coconut oil
  • 1/4 cup red onion
  • 1/4 cup sweet peppers
  • 1/4 cup mushrooms
  • 1/4 cup broccoli
  • 3 eggs
  • 1 pinch each sea salt/black pepper


  1. Heat one tsp of coconut oil in a small omelette pan on medium heat.
  2. Add in sliced red onions, sweet peppers, mushrooms, and broccoli.
  3. Saute veggies for 1min on medium heat.
  4. Wisk Add whisked eggs into pan with sauteed veggies.
  5. Cook on each side for 1-2 min or until omelette is firm.
  6. Serve with a side of fresh fruit. Enjoy!
